Urad Curry (black lentil curry)
- 1 bowl whole urad (black lentils)
- 2 red onions finely chopped
- 1 teaspoon cumin seeds
- ½ Teaspoon mustard seeds
- 2 teaspoons simba mbili garlic powder
- ½ Teaspoon simba mbili ginger powder
- ½ Teaspoon simba mbili turmeric powder
- 4 tomatoes puréed
- 1 lemon’s juice
- 1 tablespoon oil
- Soak the urad(black lentil) overnight. Then boil it with enough water.
- Heat oil in a saucepan, add cumin seeds and mustard seeds. Once tempered add onions, garlic powder, ginger powder and let it cook until the onions brown a little.
- Add tomato purée and let it cook slightly. Add the boiled urad (black lentil) and lemon juice. Let it cook until thickened.
- Serve hot with rice, chapaties or naan.
