Southern Fried Chicken

  • 1 chicken

Dry masala

  • 2 tablespoons Simba Mbili paprika
  • 2 tablespoons Simba Mbili ground black pepper
  • 1 teaspoon Simba Mbili garlic powder
  • 1 teaspoon Simba Mbili dried oregano
  • ½ teaspoon Simba Mbili red chilli powder

Chicken marinate.

  • 1 cup yoghurt
  • 1 egg
  • 1 teaspoon salt
  • 2 tablespoon of the mixed dry masala

Flour for coating:

  • 1 ½ cup all purpose flour
  • ½ cup corn flour
  • 1 teaspoon baking powder
  • Left over dry masala
  • 2 tablespoons of the marinate.
  • 1 chicken cut into 8-12 pieces
  • Mix the above dry ingredients for dry masala in a bowl and keep aside.
  • In a separate bowl mix, the chicken marinate ingredients together
  • Add the chicken to the chicken marinate ingredients and marinate the chicken overnight. 
  • Remove one piece of chicken from to marinate at a time, allowing excess buttermilk to drip off, drop the chicken into the flour mixture, and toss to coat. Continue adding chicken pieces to the flour mixture one at a time until they are all in the bowl. Toss the chicken until every piece is thoroughly coated, pressing with your hands to get the flour to adhere in a thick layer.
  • Deep fry the coated pieces.
  • Serve hot with gatundu sauce and perinaise
