Southern Fried Chicken
- 1 chicken
Dry masala
- 2 tablespoons Simba Mbili paprika
- 2 tablespoons Simba Mbili ground black pepper
- 1 teaspoon Simba Mbili garlic powder
- 1 teaspoon Simba Mbili dried oregano
- ½ teaspoon Simba Mbili red chilli powder
Chicken marinate.
- 1 cup yoghurt
- 1 egg
- 1 teaspoon salt
- 2 tablespoon of the mixed dry masala
Flour for coating:
- 1 ½ cup all purpose flour
- ½ cup corn flour
- 1 teaspoon baking powder
- Left over dry masala
- 2 tablespoons of the marinate.
- 1 chicken cut into 8-12 pieces
- Mix the above dry ingredients for dry masala in a bowl and keep aside.
- In a separate bowl mix, the chicken marinate ingredients together
- Add the chicken to the chicken marinate ingredients and marinate the chicken overnight.
- Remove one piece of chicken from to marinate at a time, allowing excess buttermilk to drip off, drop the chicken into the flour mixture, and toss to coat. Continue adding chicken pieces to the flour mixture one at a time until they are all in the bowl. Toss the chicken until every piece is thoroughly coated, pressing with your hands to get the flour to adhere in a thick layer.
- Deep fry the coated pieces.
- Serve hot with gatundu sauce and perinaise
