Roasted Tomato and Garlic Soup
- 8 tomatoes cut into half
- 2 teaspoons Simba Mbili garlic powder
- 1 tablespoon olive oil
- 1 teaspoon Simba Mbili oregano
- 1 large onion, chopped
- 1 cube vegetable stock
- 1 teaspoon honey
- 6 – 7 basil leaves
- Salt to taste
- Preheat the oven. Arrange tomatoes cut and put on the baking sheet lined with foil. Drizzle with 1 tablespoon of olive oil, sprinkle salt, garlic powder and oregano and place in the oven for 30 minutes. Also, once the tomatoes are in the oven.
- Once everything is roasted, remove the skin of tomatoes and set aside.
- In the medium pot, heat oil over the medium heat. Add onion, sauté until soft. Add in the already roasted tomatoes and add vegetable stock. Once boiling, turn down the heat and simmer for a few minutes before blending. Blend until completely smooth. Taste the soup and add honey and the fresh basil.
- Serve hot.
