Khatu- Tamarind Sauce

- ½ kg tamarind- seeds taken out
- 650 grams jaggery
- 1kg juicy dates- seeds taken out
- 2 teaspoon salt
- 4 teaspoon Simba Mbili ground cumin
- 2 teaspoon Simba Mbili red chilli powder
- Soak dates in water overnight.
- Boil tamarind and jaggery. Let it cool and then grind in juicer and strain.
- Grind the soaked dates and strain.
- Mix the tamarind jaggery and dates altogether.
- Add the mixed tamarind, jaggery, dates, salt, ground cumin and red chilli to a sauce pan and boil the mixture until thick and all the ingredients mix in well.
- Let it cool
- Serve with bhajias, pack potatoes, used in Zanzibar prawns marination.
