Khatu- Tamarind Sauce

  • ½ kg tamarind- seeds taken out
  • 650 grams jaggery
  • 1kg juicy dates- seeds taken out
  • 2 teaspoon salt
  • 4 teaspoon Simba Mbili ground cumin
  • 2 teaspoon Simba Mbili red chilli powder
  • Soak dates in water overnight.
  • Boil tamarind and jaggery. Let it cool and then grind in juicer and strain.
  • Grind the soaked dates and strain.
  • Mix the tamarind jaggery and dates altogether.
  • Add the mixed tamarind, jaggery, dates, salt, ground cumin and red chilli to a sauce pan and boil the mixture until thick and all the ingredients mix in well.
  • Let it cool
  • Serve with bhajias, pack potatoes, used in Zanzibar prawns marination.
