Hot Honey Chicken Tenders

For the sauce:

  • 4 tbsp sriracha
  • 1 ½ tbsp butter
  • 1 heaped tsp dijon mustard
  • 2 tbsp honey
  • 1 tbsp apple cider vinegar
  • 1 tbsp soy sauce
  • 1 tsp sesame oil
  • ½ tsp: Chinese five spice,
  • ½ teaspoon Simba Mbili ground cumin
  • ½ teaspoon Simba Mbili paprika
  • ½ teaspoon ground coriander powder

For the chicken:

  • 3 chicken thighs cut into strips
  • Approx 1 cup of flour seasoned with salt and a pinch of Simba Mbili paprika
  • 1 egg whisked with a splash of milk
  • Approx 1 cup of golden breadcrumbs mixed with 3 tbsp sesame seeds
  • Vegetable oil to shallow fry
  • Coat chicken in flour, egg wash then breadcrumbs then shallow fry in hot oil over a high heat for a couple of minutes either side until golden and cooked through
  • Meanwhile, add all your sauce ingredients to a pan and gently heat, stir until combined
  • Toss the chicken in the sauce then serve it up with mayo and spring onions
