Hot Honey Chicken Tenders

For the sauce:
- 4 tbsp sriracha
- 1 ½ tbsp butter
- 1 heaped tsp dijon mustard
- 2 tbsp honey
- 1 tbsp apple cider vinegar
- 1 tbsp soy sauce
- 1 tsp sesame oil
- ½ tsp: Chinese five spice,
- ½ teaspoon Simba Mbili ground cumin
- ½ teaspoon Simba Mbili paprika
- ½ teaspoon ground coriander powder
For the chicken:
- 3 chicken thighs cut into strips
- Approx 1 cup of flour seasoned with salt and a pinch of Simba Mbili paprika
- 1 egg whisked with a splash of milk
- Approx 1 cup of golden breadcrumbs mixed with 3 tbsp sesame seeds
- Vegetable oil to shallow fry
- Coat chicken in flour, egg wash then breadcrumbs then shallow fry in hot oil over a high heat for a couple of minutes either side until golden and cooked through
- Meanwhile, add all your sauce ingredients to a pan and gently heat, stir until combined
- Toss the chicken in the sauce then serve it up with mayo and spring onions
