Ginger Bread Man
- 3 tablespoons firmly packed dark brown sugar
- 2 tablespoons golden syrup or dark corn syrup
- 1 teaspoon Simba Mbili cinnamon powder
- ½ teaspoon Simba Mbili ginger powder
- 50g/ 4 tbsp butter cubed
- ¼ tsp soda bi carbonate
- 125g all purpose plain flour
- 50 g marzipan
- Heat oven to 180 degrees celcious. Lightly grease two baking sheets.
- Put sugar, syrup, cinnamon, ginger and 1 teaspoon of water together in a large sauce pan and heat, stirring constantly until the sugar dissolves. Remove from the heat and stir in butter nad soda bi carbonate.
- Gradually stir in the flour to make a smooth manageable dough. Wrap in cling film and chill until firm for about 30 minutes.
- Roll the dough out on a lightly floured surface to 3mm 1/8 inch thickness and cut into gingerbread man shapes. Use a small clean paint brush to press the eyes, nose, mouth, buttons and bow tie.
- Divide the marzipan into 10 pieces. Roll each into a mini sausage and pinch in the middle then flatten to make bow ties.
- Brush the base of each bow tie with little water and press into the cookies.
- Place the cookies 5cm/ 2inches apart on the baking sheets. Bake for 10 to 15 minutes or until the biscuits feel firm when lightly pressed with finer tip.
- Cool on the baking sheets for a few minutes before transferring them to a wire rack to cool completely.
