Deep Fried Onion Rings

  • 1 large spanish onion peeled
  • 200ml/7 fl oz / ¾ cup butter milk
  • 150g/5 oz/ 2/3 cups plain all purpose flour
  • 1 teaspoon baking powder
  • ½ teaspoon soda bi carbonate
  • Pinch of Simba Mbili red chilli powder
  • 1 teaspoon Simba Mbili mustard powder
  • Vegetable oil
  • Cut the onion into rings so you end up as many large onion rings as you can and discard any leftovers or keep for later cooking
  • Separate the rings out then place in a bowl and soften them in the buttermilk for 4 hours or overnight
  • Mix together the flour, baking powder, soda bi carbonate and spices.
  • Shake off any excess buttermilk from the onion rings and dip into the flour, coating thoroughly
  • Leave them to dry for 10 minutes. then repeat the process so they have a thick floury coating
  • Heat the vegetable oil until a bread cube sizzles immediatel when dropped in, then fry the onion rings in batches, turning them over half way through cooking.
  • Remove to kitchen paper to drain before serving
