Baked Sweet Potatoes

- Heat olive oil in a saucepan, add onions, garlic powder, mushrooms and salt. Cook the mushrooms.
- Add red chilly powder, black pepper ground and cooking cream. Keep aside.
- Wrap the sweet potatoes with foil and bake at 200°C.
- Once the sweet potatoes are baked, take them out of the oven and remove the foil and cut them in half.
- On the cut sweet potatoes place cooked mushrooms, sprinkle spring onions & cheese and grill it until cheese has melted.
- Mix all the ingredients for the sour cream together. Keep aside.
- For the avocado dip, blend / sieve the avocados, lemon juice, salt, coriander and garlic powder. Once blended / sieved, add onions and mix well.
- Serve the sweet potatoes hot with sour cream and avocado dip.
